Applications
Calcium propionate is frequently utilized as a preservative in yeast-leavened baked goods, including pre-packaged and sliced bread, as well as in certain chemically-leavened items like tortillas. Also, it is especially active against the rope-forming bacterium Bacillus mesentericus.
